Thermal pre-gelatinization is breaking of molecular bonds by using heat and water within any starch material that is present in any food-grain. It provides starch additional capacity of holding more moisture and also helps dissolve the starch in cold water to form a suitable viscous mixture.
This process when performed on rice, Bajra or Jowar which have hard shells convert starch present in these food-grains into soft flour. Adding water into it can make smooth dough easy for rolling. The process does not alter any natural qualities of the food-grains. Beauty of the process is that there are no chemicals or any additives required.
